If you look at the new box art you see the red is signifying they are from Vior'la (a Tau empire home world) you could paint all the white bits blue and they would still be Vior'la sept if you keep the red. In lore Tau change armor colour to blend in with their surroundings (nuclear tundra is the theme of the box art).
